Way-back-Wednesday - Who remembers this recipe we posted back in 2021?? Give it a try! It's healthy and delicious. 😀It's been a while since we shared a recipe! Ever heard of a wheat berry? Did you know it's not actually a berry? It's a wheat kernel! 🤯 Try this salad below, which is one of Lisa's favorite summertime recipes! ⁣

Oregon Wheat Berry Salad⁣

-1.5 C wheat berries (can find bulk at WinCo, or substitute with your favorite cooked rice or grain)⁣
-3/4 C roasted, chopped hazelnuts⁣
-1/2 C dried cranberries⁣
-1/4 C diced celery⁣
-1/4 C gorgonzola or goat cheese crumbles⁣
-1-2 C baby kale, chopped roughly⁣
-3-4 green onions, sliced⁣

Dressing:⁣
-1/4 C rice or apple cider vinegar⁣
-2 whole garlic cloves, minced finely⁣
-1/4 C honey⁣
-1/4 C olive oil⁣
-Salt and pepper to taste⁣

Rinse wheat berries. Place in saucepan with enough water to cover by at least 2" and 2 T salt. Bring to a boil on high heat, then reduce to a simmer for approximately 1 hour or until wheat berries are cooked through but still a touch chewy. Drain wheat berries and set aside to cool. Whisk dressing ingredients. Pour over cooled wheat berries and mix in remaining ingredients. Season to taste. Best served after being chilled for a couple hours.
